Getting to the end of tomatoes..

I've canned tomatoes, and their juice. Flavored it up and stewed them.. make sloppy joe stuff, and enchilada canned goodness.. a couple kinds of salsa.. dehydrated and smoked them, and finally pulped and frozen them.

Now I'm getting to the end of season tomatoes.. the slower to ripen, the more apt to crack and cork.. the end of the tomatoes. We are at the end of fresh eating, and I'm using up what I can with more canning batches of enchilada sauce..

But heck, what else to do with end of season tomatoes? The ones not quite nice enough for preserving, and not quite green enough for other uses?
