Jerusalem artichokes, if you have the space. Buy a bag of 'sunchokes' at the grocery store.

See if you like them raw in salads or roasted with other root vegetables and save a half dozen to go in the ground now . Space about a foot apart because they will make big root systems and the plant (looks like a minor sunflower) gets tall. Mine are flowering late (now) because of the harsh heat and drought of August. Deer will nip at them as they browse but the plants will grow back just fine.

If you aren't already familiar with it, you've got to get hold of a copy of "Eat Your Yard!" by Nancy Chase. She's in your area, Asheville I think. You'll love her book - all about growing edible trees, shrubs, vines, herbs and flowers for your landscape.
