Stone to mantel or to vaulted ceiling?

We are adding a great room to our old farmhouse. The front wall has a wood burning fireplace. We have chosen a large stone for the fireplace. The mantel was just installed and is a simple cedar beam. The ceiling is vaulted (14' at peak) with the fireplace centered at the peak. My dilemma is whether to stone all of the way to the peak, or stop at the mantel? Also, if going to the ceiling, then taper to the top or a straight line? Any pros or cons either way? The vertical wood pieces will not be there permanently, they are just holding the newly installed mantel in place for 24 hours. The second picture is of the stone we have picked out.
