You could but the quality of the pickles will be affected greatly. Few pickles will hold up to double heat processing, they go soft and mushy.

Plus it is a real waste of your time and the energy used for the re-processing. Once opened the quart jars will keep for months in the fridge so why are they so focused on only pints?

Maybe a quart jar is intimidating to them? They eat them all anyway and love them so what is the problem? I don't know. Or, maybe they don't have a long enough fork to fish them out. I don't know. Frustrating. I think that when they come begging I'll dump the quarts into pint jars in front of them and admonish them that they have to keep them refrigerated, like forever, never to be at room temperature, eat immediately cold from the refrigerator, or else they'll blow up, or something. If they question, I'll them that I will be glad to re-can them in the "right" sized jars and they can have all the mushy pickles they want. Frustrating, picky picky.

Wow, beggars and choosy ones at that! Rather than dumping them into pints, only give them a 1/2 pint jar. Maybe then they will realize how good they had it. :-)
