What type of pepper?

if you're only used to peppers from the store, then you've never had a fresh pepper before. Are you saying that your peppers you grew are crunchier than normal?

Pics? Are they wrinkly too? From your description they sound like they went from ripe to drying on the plant.

Jalapinos. Yes, crunchier. Maybe crisper is a better word. And not as hot. No wrinkles though. Maybe I'm just to accustomed to the ones at the super market, not fresh ones. Mine actually taste better. They are just different somehow.

Crunchier = fresher. The ones you get in the store have been sitting for days to a week. Also the sooner you eat them after they have been picked the better they are for you. The longer they sit the more nutrients they lose.

Jalapino = Jalapeño = Xalapeño

It's also possible there's a varietal difference. It sounds like you are happy with the taste of one you've chosen, but there are many varieties that range across spectrums of size, taste, thickness, color, and 'heat'.

All the Jals I have grown were very firm and thick walled. I think we get used to the 2 week old peppers in the grocery store that are stale and soft. The ones that I grew would almost "crack" when you squeezed them instead of just mushing up.

Jalapenos should be solid hard. Like esox said, they should crack before they bend! :)
