If you're getting a lot of weeds in the joints, the installer probably used regular sand or stone dust in the joints and not a polymeric sand (polymeric sand has binders that lock it in place, making it less likely to wash out and less hospitable to weeds). If that's the case, ask them to come back, pressure wash the joints clear, and fill with poly sand. As to the moss/green, are the pavers on the shady or north side of the home? If so, there's your problem. We built the patio at my mom's house and it's on the north side of the house. It's a yearly job getting the green funk off the bricks.

Nicolock is a perfectly fine manufacturer. I don't see how what paver you use is going to keep weeds away.

If you are lucky when you remove the window and open that space for the french doors you might be able to save the bricks to use for the door closure as for moss it will grow wherever the sun doesn’t hit and there is the slightest bit of moisture.
