Right the lighting store is retiring and ordering more chain from Elk. But my question may seem silly but does the height of pendants change at all depending on ceiling height. I am 5'3" and I know dining room table lights are usually a little over my head. I just wondered if they would be slightly higher in a room with a high ceiling- for proportion reasons. I am probably over thinking this

The height over the table really never changes still bottom of fixture approx. 30” from table after all the fixture is still lighting the table.

With a tall ceiling if the lighting is too high it just looks "off".

See how it changes with the light lower.

If the void of space is an aesthetic issue for you perhaps select a multiple bulb varied height set of pendants.
