Since the fruit will oxidize quickly when they are ripe, you can freeze the pulp to use later in smoothies, or freeze the pulp in a popsicle molds with a stick inserted in each.

Very nice haul! I've only eaten one Sapote from a fellow-gardener's tree and it was good.

That's a good idea - Popsicle sticks.

It is really too bad they over ripen so fast. That's the only drawback to these types of trees.
