Need help with kitchen in my new house

My dilemma is the kitchen of the house we will be moving into. We are on a tight budget since we will be replacing the mica counters with granite and adding a tile backsplash. My style is Traditional with earth tones. Here is the current kitchen I'm thinking of a light granite with brown marbling like the Ice Brown Polished. My question is should I leave the cabinets the color they currently are and what kind of back splash would work I was thinking of a Travertine with some accent tiles. The next thing is the current lighting in the kitchen. There are five basic canned lights and one ugly recessed fluorescent with a cloudy plastic cover. Also the ceiling is at a angle since it is vaulted in the kitchen. I'm not sure if or how we can remove that fluorescent light and what should go in its place I would like to have pendent lights in place of the canned lights I just don't remember where the placement of them is. We won't be in the house for another four weeks. These are the only photos I currently have. The floor tile is pretty neutral and in great condition. Oh and I would like to remove the panels from one set of cabinets and put in some kind of glass. I just can't visualize all this to know if it will all work or would I be making things worse? Any help is greatly appreciated. If it helps its a open concept on the other side of the breakfast bar is the family room.
