Concrete slab advice

Contractor pour 36 x 48 slab for my workshop right before a storm. "We do this all the time in WA" sigh. Top didn't set right and tarping left lots to ridges, not what we agreed upon. Plan is to grind it down and then put hardener/sealer on and that takes about 3 days of dry and non-freezing weather I'm told. Can the sealer be put on after the shop is erected? It will be broken up with several dividers and bays and smaller rooms.
