What zone are you in Amber? It has been pretty cold in most of AZ so they are not going to grow as fast as you hope. They look a little slow growing but with this weather I would say they aren't too bad. If I had them here where I'm at they would be burnt or not have come up at all.... Camp Verde 8b

Could Amber rig a hoop cover on that bed's wood with PVC tubing and plastic?

So far this has been a colder than average winter. Kale, as you mentioned, loves the cold for its flavor, but it still slows the growth rate. You can just accept that it's gonna take a bit longer for your vegetables to fully mature or it's still early enough that you could build a mini green house out of some pvc and plastic sheeting if you need an earlier harvest. Personally, I would just ride it out and with the expected future forecasts, plan to add 2-3 weeks to winter crop mature dates, especially with kale so it can be exposed to the freezing temps. Just my 2 cents.

If you want to push your veggies to produce in spite of the cold, here's an example of a pvc hoop house. Mine is often covered in mosquito netting but you could do plastic sheeting instead. Attach the sheeting with binder clips (those office supply thingies). Additionally, add some old fashioned Christmas lights laid on the soil, the big bulb ones that put out a little heat. I have frost cloth over some tomatoes now and it's 15° warmer under the cloth.

Mary I put up 2 hot house things just like yours last year in my raised beds...question.... How do you keep those winds from tearing apart the plastic cover. It ripped the blazes out of mine. Camp Verde

I think you need to add some 'blow holes'. You've seen it in large tarps, they cut a U-shape in several spots. I don't use plastic, I have frost cloth now, in summer it's just mosquito netting. Good luck CV.

Mary emailed your pic to my husband. He had a few questions.. What is the white metal fencing for? Could you give a little more info about your drip. Like the way you went through the boards with the hose. Is that a timer on the right if so what kind. He loves the water set up. Info would be appreciated

The white metal trellises were an experiment - a failed experiment. It was intended to keep the vining tomatoes from sitting on the soil. Major hassle working around the metal. Don't bother.

Re the watering, nothing sophisticated: Hubby drilled a hole in the board so I could thread the soaker hose through to connect it to the hose from the faucet. (We have those quick connect thingies on all hose ends.) I really need a better watering system, there's no timer although there should be. Just lazy about getting it all set up. We do not have enough faucets for all my gardening needs. Hoses are all over the ground all the time. I've used a timer before, don't remember what it was but it was easy to set up. Problem was I had a brass adapter with four connections off the one faucet and it became too heavy. We'll probably move out of this house sometime this year and I hope to get a much better setup the next time around. HTH

Thanks Mary So you are using soaker hoses connected together(for both beds) and no bubbler or drip........I thought you maybe had a cat that was digging( ref fence) What size are the beds my 2 are 4' x 8' x 3' high and I am looking for a better watering system. Constant watering when its hot is getting old

Do you use clear plastic sheeting for that? I have only seen opaque, but I assume that would not allow the plants to receive proper sunlight. Thanks for all the advice!

Home Depot and Lowes have 6 mil clear plastic sheeting in hundred foot rolls. That's thick enough to put up with a lot of wear and tear. Even under gravel lawns. At 10 feet wide it would match up pretty well to hoops made out of 10 foot PVC pipe. The problem might be, with AZ sun, it being too good.

My greens look just like that (or smaller, due to shade). Your stuff looks right on track, considering the constant cold and cloudy days.
