Oh and one too low would block the view from the kitchen to the TV in the living. Not a terrible problem but I do love some TV while I cook. :)

You could consider something that would mount on the wall. Check this link, it may give you an idea:

Have an electrician give you aid with this one. Ask him to add a place to add a hanging light to come down to about 36" above the table. Just make sure this is where the table will be best located. Have the pot lights & hanging light on separate switches with a dimmer as well.

I really like that. Adjustable both or all ways, too. Make sure your bulb can be of the wattage or lumens that will provide the light needed.

Thank you both! I didn't know this existed but with the right one, this could work (and in other areas like my art studio as well)! Who knew? Thank you! I have the pot lights on a switch of their own. Of course I have one wall light we have not been able to figure out (been in this house for 5 months). I think that will be a project for the electrician as well!
