Backsplash without Low Back Trim

Hi there! My remodel is in progress and I'm having this range installed soon. I have a question about the specs on this that require 12" from rear of cooktop to noncombustible material. I see these commercial depth ranges installed directly against walled backsplash all over Houzz, without the Low back trim, and wonder what install/wall-prep process is being done to allow that? I really don't want to use the low back. The wall it will go against will be having it's window closed in this week, and I wonder what material is/can be used to ensure I can have a flush install like this. Thanks for any input you can share.
