Thanks Martha. Your a mind reader! That was one the colours on my shortlist. Here's some of the colours I've come up with.

I would lean white, both for better contrast with your floors, and to help blend in with the appliances. Don't have a color name to hand, but that shouldn't be a big issue.

Thank you for the suggestion. I was thinking of a Benjamin Moore cloud white as well. In the grays I was looking at Gray owl, fieldstone, and pigeon Gray. The appliances are slowly being changed out with stainless steel.

Cloud white is a warm white, subtle but warm.

I would strip the birds eye maple and stain it gray to see the grain these cabinets are worth more than you can imagine and to cover them with paint would make me very sad.

Birdseye Maple, yes try to stain it a color. Very light steel wool to remove some finish since it's likely a veneer then try some stain colors and top coats. Worst case then paint a color that Martha selected.
