Can you post a pic that is closer to the cabinets/countertop? Hard to tell from that far away

You may want to remove the small backsplash first. Choose an ivory standard size porcelain subway tile. Experiment with end on end vertical. end on end horizontal. running bond horizontal. chevron, or herringbone placements. Lay it tight & grout with a color from the countertop. You will not go wrong. Good luck. It will be classic & timeless.

I was hoping to keep the small backsplash. Is a tile backsplash a no-no with that smaller backsplash? We could't decide on a tile when building. We just let our builder do as they wanted. I'm thinking we'll have some pretty significant repairs if we remove that.

The 4" backsplash is rather a cheap way to finish a countertop/ backsplash. Here are some Houzz discussions about it.

Your countertops are quite busy. You need to go with something that is plain.

Subway tile is classic, elegant, plain and does not compete with your countertops. They should be the star of the kitchen.

Grout should match tiles.

Try paint for a while and see what moves you.
