3/4" butcher block stability?

I would like a thin wooden counter top for my kitchen like this. I worry about warping, especially from dishwasher steam or just seasonal movement. How is it sealed? is it constructed with splines? 1 1/2 inches is usually as thin as I see, with preferences seeming to run even thicker. Has it performed to the homeowners satisfaction?

This is 3/4" butcher block sealed white (3) coats of water based sealer. All of the joints were put together with biscuits and exterior grade glue. We combated the warping by making sure it was adequately screwed to the cabinets. It has held up rather well, but I am planning to re-sand / coat every 2-3 years.

What type of wood is used here for the butcher block?
