If all you need done in the laundry is to add cubbies, you could purchase them and place yourself - save yourself a ton of money. If you search Cubbies in Houzz shop for instance you'll see the wide assortment of what is available out there and they should be easy to find. Just measure your space and figure out what your needs are - how large you want them to be and how high/wide, etc. Also look at pictures of mud rooms for additional ideas, like coat hoots, adding baskets in the cubbies, etc. If you just want your range hood covered with wood, I would speak to neighbors/friends/relatives and get recommendations on a carpenter they may have used.

I would check out Ikea for cubbies very affordable and IMO not something I would pay custom for in a mud room

Locker systems can be done by a carpenter or a closet designer. They can be tailored to fit your needs and budget. As for the hood, I would ask a kitchen designer as they would be better at knowing if there were certain codes that needed to be followed.
