I like the notion of a cream (or whatever white best matches the stone) or a pale gray, in a simple ceramic or glass subway tile. Given your floor, you could probably go toward a tan or taupe too -- use the tones of the stone as a guide for your options.

What size subway tile would work best? any ideas on a pendant light?

I think you could choose the size you like - subway could definitely work, as would longer 4 x 8 or square 4 x 4 tile. Do you have a preference?

Pendant for where? Over the sink, island, or both?

anniebird, I like the larger tiles. They seem less busy for the busy countertop.

Sounds good - get samples of a few different things you like and bring home. If you post photos, we'll all give opinions - for better or worse ;)

Just remembered another tile option - I have this in my laundry room and it looks like concrete - large scale, really pretty. https://www.tileshop.com/product/converse+gris+12+x+24+in.do?sortby=ourPicksAscend&refType=&from=fn&ecList=7&ecCategory=100197

Have you chosen a backsplash yet? I have the same dilemma with choosing a backsplash for my cherry cabinets and Dallas White granite. Floors are also beige.

No, I haven't. I've considered Anatolia bliss called mist which seems to match. I just worry about that backsplah looking dirty if it is too gray but I also want to avoid anything too beige. What is the paint on your walls?

I have a greige color paint on my walls. It sometimes looks more beige and other times gray. May think about changing that in the future also.

Love the Anatolia bliss tile in mist. I think that will look great!

I also have a griege color, BM revere pewter which tends to look more gray and the tile looks a bit grayer next to it. I'll post a pic if I decide to go that route. Please do the same. Good luck.
