white wine substitute in Oranges in cointreau

The Ball Complete has a recipe for Oranges in Cointreau. I am substituting kumquats for the oranges. The recipe specifies I can substitute Triple Sec (which I have) for the Cointreau (which I don't have) in the recipe. The recipe also calls for 1/2 cup dry white wine.

Is there something I can substitute for the white wine? I don't drink and don't know much about wine. I have a partial bottle of Riesling Kabinett (I have no idea what all that means) in the refrigerator and it has been there a while. I could use that if it is a good choice for the recipe, but I'd be happy to substitute something else if I can.

Is the wine an acidity factor in this recipe that would affect safety? I'm assuming that because it is a kumquat based recipe it is not a safety issue. If I can make another substitution, what would it be? Kumquat juice, perhaps?

Has anyone made this recipe that can advise on the flavor, uses, etc.? I have a lot of kumquats and have already made marmalade, kumquat nut bread, etc. I'm thinking this would be good served over pound cake.
