Wow you already gutted and have no plan? You need to get to a kitchen designer quickly as it could take 4-6 weeks to order cabinets, etc

Standard cabinet widths are usually a multiple of 3" (i.e. 15", 18", etc.) You should allow for a minimum of 3'-6" aisle between island and counters, 4'-0" is better. You could gain a little space by narrowing your sink base to 30". Also, I doubt that your fridge extends that much forward from the adjacent counter, it's usually just 4"-6" unless you have chosen an extra deep model.
