Did you stir the finish well?A satin poly is gloss poly with silica added to flatten it and it settles to the bottom.

You may want to try a flat poly.

if you like the color you can just go over the stained (too shiny) finish with a thin coat of low gloss clear polyurethane. Possibly just dust it with spray paint, you won't want a thick build up of products or it might not look good.

A dusting of "spray paint I" on a cabinet will last about as long as it takes you to put it on and will not be a smooth finish. I imagine no matter what the sheen you would like a smooth finish?

Rubbing out a dark poly finish usually makes it hazy. Poly is designed to be abrasion-resistant, which causes a hazy reaction when its abraded. You can't expect an artisanal finish from a product like Polyshades.

Did you find a solution that worked? I have the same issue, needing to darken some super high contrast hickory cabinets but not a fan of how shiny satin is. I want a matte finish like they are to start with, just need to darken the lighter areas. Found the look with a stain and no finish, but all the polyshades are too shiny.
