Can you show all the walls where the backsplash will go?

Agree with taking a tone from your stone, but you could consider some kind of gray (subway tile or glass) as well if you want to go that way.

ACM: I don't want kitchen to be overly beige. Like the idea of a gray to break it up.

I've attached a link to Ames Tile SPRSM mosaic tile. It's a dark grey that has some variety to add visual appeal. But at the same time, it won't compete with your countertop as it's all in the same color. If you have a larger backsplash area behind your stove area, this would be a great feature.
