Chickens....tons of chickens;)

I have 20 birds that I've got bagged up in various assortments. I took all the back/rib portions and bagged many up to use as casserole or noodle meat (there was a LOT of meat on these). The rest, I wanted to try my hand at chicken stock with. I know this has been asked before because I know I've read it, but for the life of me I can't find the thread. I read on NCHFP that "pieces" of the meat can be added to the broth. How much is too much? Like I said, there still seems to be a lot of meat on these cuts. I also saw that the processing time is 20-25 min, depending on pints or quarts. It doesn't seem right? Thank-you for answering a redundant question. Lori
