I would say your id is correct but to be absolutely sure did it sting you? Just brushing a finger tip on one stem would tell you for sure if it is Stinging Nettle.

I have eaten it as greens, pesto and soup and I have to say I was not very impressed but lots of people say it's delicious. Maybe my reluctance to add cream to any recipe meant it didn't taste as good as it could. It needs to be picked very young and then you can use it in any recipe where you might use spinach. Or just Google 'stinging nettle recipes'.

It's very perspicacious of you to say it smells like twine. It was originally introduced in to the British Isle by the Romans as a source of fibre. It can be spun and woven.

I am actually just about to make some nettle soup myself! I use this recipe normally, with some tweaks. It's not usually very tasty, so I add some spices. The taste of the nettles itself is average, in my opinion, but average as in bland... It's supposed to be good for you though.

As Floral mentions, you're only supposed to eat the young leaves (the "tops"). The older leaves build up bits of calcium carbonate (cystoliths), so apparently they can be a bit gritty.

Use it like spinach or kale, cooked into a soup, etc. With lots of garlic and other herbs and things with flavor, the tast of the nettles is not so much of an issue. I mostly use it in an herbal tea blend, fresh or dried. I don't think I'd like it by itself so much, but with all the mints and lemony things mixed in, it is a nutritious addition.
