How big is this plant? Once dried the volume decreases a lot and you need a fair amount for tea. You could try it in tabouleh but personally I don't think it would work in recipes where spearmint is called for. The taste is very different and very strong. Much more medicinal. Toothpaste flavoured salad doesn't appeal to me.

I don't like spearmint, so I used peppermint instead. In small quanities it goes in tabbouleh, tzatziki - pretty much any Middle Eastern dish that calls for spearmint. I've also put it in salad dressing. Unlike the oregano, I do have a fear of eating the peppermint to death. So it is something I use, but don't look for excuses to use it.

Peppermint ice cream sounds yummy! I have not made homemade ice cream before but would like to. Good idea! Any other ideas out there?

The peppermint plant is in a container pot and usually gets trimmed twice a year.

Here is the recipe I use. Tomatoes fresh from the garden make all the difference, which is why I usually only make it in the summer. Plus it's often too hot to want to eat much, so top this with some feta cheese and it's a complete meal.

I don't seed the tomatoes if I use cherry tomatoes, I just cut them in half.

I have a carafe of mint water in the fridge most of the time in the summer. Add a bit of mint to any cut fruit or a cucumber salad.
