Parsley is biennial. If it overwintered it will flower and go to seed this year.

The current leaves will have a fairly strong taste, and be a bit tough. As Floral said, it will also die off in a couple of months, so you will need to replace it.

Oh, so maybe I should just toss them. I grew plenty of nice starts from seed, I really don't need to keep them. They just look so nice...

If you have Swallowtails parsley is a food plant. And it might self sow if left to ripen.

If you have the room, you might try what I do at least this year and see what happens in your garden...

My biennial Italian flat leaf parsley in my herb garden from last year is growing like crazy, leaves are more bitter and sending up flower stalks. I usually pull up 1/2, let the other 1/2 flower and plant new plants each year. The pollinators (including the black swallowtail butterflies) love the flowers and they look nice with my well-established sage and chive plants that also have a ton of blooms in bud. I love seeing the black swallowtail caterpillars… they grow from tiny to large within 7-10 days then pupate in my stone walls.

We always liked it when the parsley overwintered since we could harvest some early.

LIke the flowers of dill, the flowers of parsley are favored by many beneficial insects, including ladybugs, parasitic wasps, lacewings.

I've been overwintering parsley for years. Usually in bins under caps so I can harvest almost year round. Second year leaves are good while they are still young before the bolt starts and that central stalk starts to form. I also have parsley coming up in the open herb bed. Herb flowers are very valuable to the bugs around here, and I like to gather some of the seeds. Makes for a good celery seed sub in cooking and I grow parsley microgreens in the winter during the couple months the bins aren't producing. If you pull the parsley and it got decent size roots, those are edible :)
