I would put 2 recessed cans, insulated cans if there is a attic above, 2 cans per run of counter. Also, undercabinet lights are cost effective and add another layer of light.

Thanks for the advice, I'm also definetly doing undercounter lights. I never thought about my insulation though, and there is attic above. What exactly are insulated cans? Is that a specific type?

Insulated cans are rated 'IC' or 'fire rated'. There should be a light directly over the sink that is a task light type--it could be a drop pendant or can designed for direct downlight. Make sure you account for the molding around the cabinets when you decide where to put the lights.
