Is gypsum really suitable for backsplash?

I'm told that it is the same material that is used in drywall. The primary reason to put a backsplash is to protect drywall, so if this is made of the same material, is it a good choice?
The look is totally fabulous and I've been wanting to use this material somewhere in my house!

    If you use a gypsum product, you must coat it with a water resistant coating
