finish for a wood slab bar top?

Hi, I have a large live-edge slab of western red cedar that I am planning to use for a bar top. It won't be a high-use work surface (I know cedar is pretty soft), and I'd like a low-gloss clear (non-yellowing) finish. I'm having a debate with my builder over what to finish it with. He thinks it should have some type of epoxy finish to protect it, which he says he could sand down a bit so it isn't shiny, but I was wondering if some kind of water-based polyurethane would be better (I really don't want a plastic-y look). Has anyone used a product that they think would be suitable? Brand names would be appreciated! Thanks!
