With a conventional sink you have a caulk line between the sink edge and the granite. Even if it is clear caulk, it is still visible and will eventually need to be cut out and re-done. With an under-mount sink there is a seamless look with less maintenance.

I am a huge fan of undermount sinks as well. As previously stated, clean-up is a breeze & they give such a nice sleek look.

if you want "professional advice," rather than the experience of the masses, then I guess you have to define "better." aesthetically? for resale? function by some measure?

I love undermount also, however based on your wording, I am not sure that is what you are asking. You mention "rim reveal OR undermount". I am not exactly sure what rim reveal is, but it sounds like it is the type of undermount installation that reveals some of the rim of the sink, as opposed a sink that is undermounted so that none of the rim of the sink shows, ie the granite overhangs very slightly or is flush with edge of sink. So it is not "or", but how undermount is done/what sink is used. All this as opposed to a drop in sink, which would create the top seam line that others are talking about. Try googling for images to explain better, I cannot add pictures at the moment.

Make sure you talk to your granite fabricator about EXACTLY what options he is offering and what they will look like, because once the granite is cut, it is too late.

Yes, undermount for all the reasons stated above. This is mine and I love it.

A full undermount should be flush (it's cut to match your sink, after all), and the gap is sealed. So I'm not convinced about a difference in hygeine. I think I'd find the bit of sink edge distracting -- prefer the look in Susan Mooney's photo above.
