Many shoots?

Hello! I had a tuber from last year that sprouted beautifully indoors, but then started looking sad and limp once it got to about 15" tall. I wasn't sure what was wrong with it so I sprayed it with insecticide and repotted it, only to have it totally die. I cut it off at the base of the stem, threw the stem and leaves away so as not to contaminate anything else, and tossed the tuber out into the compost pile. This dahlia has returned with a vengeance, sending out about 6 new sprouts from the remaining stalk. Should I cut off all but one of the shoots to get one strong plant, or should I let them all develop? (I could try to make cuttings from them, although mine never seem to root so I'm afraid it would be a waste of plant material).
