Bathroom lighting help

I am about to start a bathroom remodel and can use help with the lighting. The current lighting is a 6 bulb bar above the double vanity and a ceiling light roughly in the center of the tub and towards the center of the room. The bathroom will be gutted and rebuilt in the same fashion, double vanity and all.

I am planning on replacing the light bar above the double vanity with 3 single light sconces between two mirrors. I am also panning on replacing the ceiling light with a recessed exhaust fan/light.

Is this the best route to go? Should the vent light go over the tub/shower area? Should I add more light above the sinks? What is the best route for this bathroom? This is a hall/kids bathroom, so functionality is more important than form.
