Overwintering (z7)

So this year I've been growing a double mahoi, a red musa, and an ice cream. Was also given a pair of poquitos someone found for sale as a gift (which as best I can tell will produce small edible fruit, though I have found nothing on how they taste).

Main concern at the moment is overwintering. I have extensive experience in overwintering peppers, but a bit of advice on bananas specifically can't hurt.
From what I've read, the ideal way is to slowly reduce water during the late season, chop them back, and store in a dark area at 40-45 degrees F for dormancy.

Thing is, I don't have an area that will reliably stay in that temperature range.
If I withhold water and chop down, will they go dormant at indoor room temperature?

I do have a grow cabinet I use for overwintering peppers, would chopping them back and then proceeding to try and keep them in an environment designed for peppers (lots of light, fans to keep air moving, etc) be sufficient, or would "chop 'em down, mostly dry 'em out, and toss them in a back room" be a better answer?
