Cold Cucumber Salad that can be canned without cream?

I've been looking through the Ball Complete and I'm not certain I'm finding what I'm looking for. I love cold cucumber salad (vinegar, sugar, dill, onion) and it usually adds mayo or sour cream that is chilled prior to serving. I'm looking for a preserved/canned in a hot water bath-- slices of cucumber, onion, dill, salt, pepper. A pint that I can pop open and then add mayo or sour cream to make the cold cucumber salad. Does such a preserved item exist? Perhaps it doesn't exist in the Ball book but maybe another approved canning book? Could you please share a recipe and/or thoughts if it's possible or if an approved canned recipe exists anywhere?

    sliced cucumbers with vinegar, sugar, dill, onion... would be a jar of pickles or a jar of relish (coarse chopped). You could then open the jar and add whatever you wished to it after opening.

    So the only issue is finding a sliced dill pickle recipe that includes enough vinegar to cover onions too or a relish recipe that already calls for the onions and then add bit of sugar to it.

    Check out Fresh Dill Relish at NCHFP and make the following changes:

    coarse chop instead of dicing (you could probably slice instead but the processing will make slices pretty soft)

    leave out bell peppers, mustard seed, and garlic

    reduce sugar to taste (1 cup may be too much for you)

    use fresh dill to taste but no more than ratios in the recipe

    use white vinegar if you prefer

    See what you think.

    Edited to add: don't reduce the brine and don't over-pack the jars, make sure it is sloshy in the jars and then drain after opening if necessary.

    Thank you, Dave. After reading your response it really is something between a bread and butter and sweet dill pickle that I think I'm looking for. I ended up using my bread and butter pickle (half a recipe) and because that's a really sweet brine, I just added less sugar but kept the vinegar the same. It ended up very similar to the Bernardin bread and butter recipe. I eliminated the normal spices of the bread and butter and substituted dill. I won't know how it goes for awhile as I'd like them to "cure" a bit on the shelf. I have another cucumber question but I think I'll ask as a new topic another day. I usually like to just read the boards so asking questions is a bit intimidating. Thank you for your input and overall canning guidance. I've learned a lot from reading many of your responses to posts.

    Are you looking for a "unpick led" cucumber salad? Me too.

    Suzanne - for canning or just for fresh eating? Since cucumbers are low acid vegetables canning them requires acidification - that means pickled in vinegar. For safety reasons they cannot be canned any other way.

    There are recipes that can be frozen but the soft mushy texture doesn't appeal to many.

    I make a cucumber salad with vinegar, onions and dill with fresh cukes from the garden but would like to can it. Based on the above recipes and advice, do I have to add sugar? If I use red onions, will the liquid turn pink?

    We picked over a dozen in the last two days. We are only 2 people and the neighbors are starting to hide from me. Help!

    I have seen recipes for "sweet dills" somewhere. Try "Summer in a Jar" by Andrea Chesman (sp?)

    Digdirt, sorry for the delay in answering you. I was going to go by the recipe you posted above with changes. I think I will add a bit of sugar, to offset a strong vinegar flavor. White vinegar and yellow onions!
