Pure White Quartz vs. Light Grey or Pattern in Contemporary Design

DH really wants a solid white countertop (Quartz) for the new kitchen, which is a contemporary/modern design. European styling, no handles on drawers. Walnut color and grey taupe cabinets. He likes the clean and modern look of pure white. I am concerned it will stain over time or every little crumb will show, so I'm considering something with very little pattern like Caesarstone London Grey, the new Noble Grey, or similar.

If you have pure white, would you choose something else if you had to do it over again? I want to give him choices in the design, but I will probably be the one cleaning the most.

Would have liked to have found a white quartzite natural stone, but next to impossible in this area.
