Do you like the expected flower of the graft? If it were mine I would do one of two things. I would even out the three stems and wait till they sprout. It takes a while after they are in full sun. You could try and sprout the small branch to obtain a plant to use as a grafts later on or just let it grow. If you cut below the graft it should sprout. I would use Elmer waterproof wood glue on any of cut to get a cleaner heal spot and no fungus. The tree would have to be in semi sun till it has healed and then slowly intro it to full sun I would protect it from your heavy rains till it is in full growth. Your sun can burn or rot a young plant coming out of being handled.

I would not cut this plant any more. Just put it in the sun, and keep it watered!

Yes it will sprout. Sometimes the stock will sprout even if the graft is active and growing---these errant sprouts are usually removed since they could take over and kill the graft.
