Really depends on your type of canner - weights or gauge. If you have both then the weights are still most accurate unless you have your gauge checked each year so using the weights time of 20-15-10 min. is really just a personal choice unless you are at high altitude.

I'd never use 15# unless I had to for some reason (even if I could find that other 5# weight ;) so I always just use the 10# time as it is what I do everything else at and so easiest for me with my canner.

Thanks Dave! I have the 3 piece weight set for my presto dial gauge canner. I always had a lot of trouble with keeping the pressure constant using only the gauge so now I use the weights, so much easier! 15# seems like overkill to save a couple of minutes so I will just stick with 10lbs@15mins!

Yeah same here on the weights and I have lost one ring and the 5# base and 5# ring are welded together into 10# by lime which I cannot break apart no matter what. So new weight set on order. Fortunately 10# is all I need. :-)
