Definitely, the fabricator can, and routinely does, double up the edge. You could even miter on a piece to make it look as thick as you want!

There are "white" granites - I adore Kashmir White myself. However, I would never use it in a kitchen as it is porous and shows stains. Typically, the lighter, prettier granites tend to be more porous.
