Yes you can as long as the different texture will be ok with you. They will be softer, more mushy when thawed.

Is it okay to leave the suet out of this recipe, and is it okay to freeze as it gives no processing time:

Green Tomato Mincemeat

3 pounds green tomatoes

3 1/2 pounds apples

2 pounds brown sugar

2 pounds seedless raisins

1 cup ground suet

1 tablespoon salt

2 1/2 tablespoons cinnamon

2 teaspoons ground cloves

1 tablespoon nutmeg

1 tablespoon grated lemon rind

3 tablespoons lemon juice

1 1/4 cups vinegar

Mince tomatoes or grind them through food chopper. Add salt and let stand 1 hour.

Drain tomatoes and add water enough to cover, Bring to a boil and cook for 5 minutes. Drain. Pare, core and chop apples very fine. Add tomatoes and other ingredients. Mix thoroughly. Bring to boiling point and simmer for 1 hour. stir frequently. Makes 7 pints.

You can leave the suet out but it won't be mincemeat without it. And you can freeze it as long as the thawed texture will be ok with you - you'll have to drain it and likely add some thickener.

Or if you want to can green tomato mincemeat you could use the approved recipe for it.
