immature cosmos seeds

Help! I am totally new to this, and happily (stupidly) cut all my cosmos seed heads - most of which where immature and green- to store over winter. Then I learned that I needed to let them mature before collecting. Can anything be done? Will my green seeds mature if I hang them upside down or something?
