Carpenters use various trim pieces and layer them on to create these type looks. The first photo of the ceiling is a simple 1x6 installed onto the ceiling to make a coffered look. You can get 1x at any lumber supplier. The more elaborate trim can also be purchased at a lumber supplier or a specialty molding supplier. Any good carpenter can do this.
