Superwhite countertop question

I've read all the Superwhite threads. Seems like the Concensus is that its marble not quartzite-but then why do some people have Superwhite that doesn't etch? Just got a Superwhite sample that scratched glass on the first pass, but not after that (I think it dulled the stone edge, which means the glass is probably harder?). My sample also doesn't etch with lemon or vinegar...is there a stronger commonly eaten acidic food I should be trying? My sample is leathered. Could that make a difference? For the record, stone yard insisted its granite, not marble when I pressed them on the issue. (Not that I believe them-at best it's quartzite. At worst it's marble...)
