Your trees look great! Very healthy, your grapefruits and lemons are ripe right now, but let them stay on the tree until you're ready to eat them, they'll keep on the tree for several months. Once you pull them they'll only last a week or two on your counter. To remove the fruit you can either clip the stem just above the fruit or gently pull them from the tree, if they don't pull fairly easily they might not quite be ready. As for the blemish on your lemon you have nothing to worry about, it looks like mite damage that happened when your fruit was forming, normal for in ground trees in the desert. You can keep mites at bay using neem oil sprays in the spring before we hit the 90 degree mark during the day. Also, just some advice, you should remove the support sticks your trees are tied to, those are strictly for transport from the store/ nursery to your home. Removing the sticks allows your tree to sway in the wind and build strength in the trunk so your tree can support the fruit on its own as it grows up. I'd wait until all the fruit is picked from your trees though before pulling the stakes, otherwise they might fall over from all that fruit hanging on them!

I prefer clipping the fruit off. It's cleaner and doesn't risk damaging the branch. I found out it also gives you a good count of how many fruit were stolen if someone sneaks into your yard and grabs some :>(

My blemished fruit always tasted fine. I have only picked a hand full of fruits.
