How would you like the room to feel? Airy, bright, clean? Or more rustic, deeper tones? You have a great starting point, now you just need to decide which direction you want to go in. You did mention this is your "winter bedding." Possibly choose a lighter set of bedding for the spring and summer months and rotate throughout the seasons. Toss some pillows in for color and texture and add some "universal art/decor" for your walls!

I'm torn, however I did find these awesome curtains. If they look good against the walls then I think my bedding should be lighter?

Wow! Those are pretty! Your bedding can still be dark in my option, however mix in some cream tones or light gray to brighten it if you want. Looks like you are heading in the right direction.

The curtains look like a nice choice. I would keep your bedding lighter and layer it with a comforter at the end of the bed. Perhaps pick out the deeper color in your drapes for pillows. This picture below best describes what I am thinking would would work

Nice room and curtains! To counterbalance the darker feel of the furniture, walls, and window treatments, I'd use very high quality white sheets to start, Sferra and Frette are wonderful, also Restoration Hardware sheets are a great value. Then get a duvet and shams in white with contrasting embroidery. Fold the duvet in thirds at the foot of the bed. Then get a blanket in an accent color...red would look great in your room. Add a few throw pillows in varying colors and patterns, and you're good to go!
