It's really hard to say - if they rotted then depending on your soil, the remains might be hard to spot.

Depending on the type of bulb, it is absolutely conceivable that a critter might eat it as well. If so, you might see disturbed soil or possibly a bulb or two lying on the surface. Have you seen any evidence of that? Any tunnels underground? Might not hurt to put down cayenne pepper to discourage any prying noses. ;)

I think with the variety you got, this can be your grand experiment. You are pushing some of the conventional boundaries of what we typically expect to see in FL. It will be fun to see what does come up and what flourishes. I hope you get a beautiful display!

I put down some bird netting, it has worked to keep squirrels from digging up my seeds when I have done a Sunflower patch. I was out there after work in the dark trying to see if anything had tried to dig through the netting hole. I need to remember the cayenne pepper! I meant to try that to try and keep the neighborhood cats out of the beds, one used to live at our house before we bought it, I love that he comes around, just wish he would poop in the wooded lot behind ours! We also get racoons and possums and who knows what else. Something totally digs up the beds besides the cat! But I figure they are after grubs or other buggies!

Hopefully once the bulbs start growing it will be OK to pull the netting off. I don't stake the netting just lay it over the beds. That works fine for my seeds, but since bulbs stay as a bulb just with a flowering stalk maybe critters will still want to chomp the bulb!?!.

There are many who put netting or wire over their bulbs. I don't have good knowledge on that myself, but if you are battling raccoons, you might consider using those lawn staples to hold it down. I would suggest doing a search on the bulb forum as discussing critter proofing has happened quite often.
