There's a brand of LED strip lights for under counter applications called Aion and you can get them in different Kelvin ranges from warmer to cooler. The lower the Kelvin range (2K to 3K) the warmer the light. The higher the Kelvin range (anything over 4K) the "bluer" it will feel. Also, consider the color of your countertops. If they are dark, you might want to go a bit higher in the K range to make it feel brighter. P.S. Nix the multi-color idea; will make your kitchen feel like a nightclub and it will feel dated very quickly.

I hear you on the multicolor however my wife is a xmas decorating nut. Thought this would be a nice surprise bonus for her.
