Bonnie, go with one in the middle; between very very high and very very low and you will have your focal point :-)

We went w/ Kohler's Forte. It's high enough to get things under it for rinsing, but not so high as to be a distraction. My wife wasn't interested in one of the high arch models. The Forte also has the advantage of its spray head sits horizontally so it doesn't droop. My sis-in-law had expensive high arch faucet w/ a vertical sprayer and it tended to not fully retract over time. We had had to replace the original faucet before we did our K reno. My wife likes it so much she insisted on keeping it w/ her new K.
