Bathroom Sofiting & Lighting

We are renovating our master bathroom. The current vanity is too big for the space so we are doing a single sink 48' vanity. This is going to make the can lights above the vanity in the sofiting be off center. Unfortunately, it's cost prohibitive for us to remove the sofiting above the vanity altogether as it would then turn the bathroom project into a full demo with several more weeks of work and increase budget by 150%.

How do we resolve this issue? Should we have the contractor patch and re-center the can lights over the vanity? Or patch the can lights and replace with a triple overhead sconce between the top of the mirror and sofit?
