I can tell you that no matter what you wind up with, you will soon forget the issue (unless the light isn't in the right place to do work). For a number of reasons, our remodeled bathroom mirror, sink, and vanity light don't line up. I thought it would drive me nuts, but I totally forgot about it until now, four years later.

I decided to go for two wall fixtures, centered over each side of the double window. Unfortunately, none of my kitchen photos show both lights so can't show you how I handled that issue. Both of mine are on the same switch but I didn't bother with a dimmer since I don't anticipate using them regularly, only for occasional tasks.

The 2 light idea is interesting. There isn't any task lighting in that corner--there's an appliance garage so no UCL, also I'm not doing can lights. I think centering the light on the window would give enough light in that corner, but 2 lights would be even better.

I think I'd be happy with either centering on the window or 2 lights. I'll talk to GC and get an idea of relative cost and impact to schedule (I have a few little issues like this, and I don't want to derail the big picture).
