Kitchen water supply

Hi. Can anyone tell me what this T tap - drop down line might be on my water supply for kitchen island sink.
I don't know anything else in the kitchen that has a water feed.. so im clueless to where this goes. My new sink unfortunately does not fit my garbage disposal with shut off valve sticking so far out. Was hoping to cut it, but no idea what that drop is for. Thanks
